Cold Noodles

【Food ingredients(2 persons)】

★Noodles

  • Noodles・・・4 small bundles(200g)
  • Water・・・・・・2ℓ
  • Ice・・・・・・10 pieces

★Sauce

  • Soup・・・・・ 1 cup
  • Japanese sweet cooking wine・・・・・3 spoons
  • Soy sauce・・・・・3 spoons
  • Ice・・・・・・Moderate amount

★Seasoning

  • Scallions・・・・・Moderate amount
  • Ginger・・・・・Moderate amount

【Production Method】

◉Method for making sauce
1)Put the ingredients for the soup in a small pot, put it on a medium heat, and turn off the heat immediately after it boils. Pour into a large bowl, remove the residual heat and place in the refrigerator to chill.

◉Prepare the seasoning
2)Ginger is peeled and grated. Cut the scallionss into small pieces. Prepare according to personal preference.

◉Cook noodles
3)Bring enough water to boil to spread the noodles into the pot. Stir gently with a spatula until it boils again, then adjust the heat to cook completely. When the bag shows the time, fish it out with a bamboo basket.

◉Wash the noodle
4)Pour running water to cool the noodles. Put the bamboo basket together with the noodles in cold water, and rub carefully with running water until the noodles are smooth. Pour into ice water and drain the noodles every 2-3 minutes.

◉Dish the noodles
